Looks wonderful - you ARE a good cook! The dried porcini mushrooms: are they the same as the dried mushrooms you can get in a Chinese store?

If a Chinese store has mushrooms, they're probably shiitake, no? Either way, it doesn't really matter since all mushrooms are fairly porous and absorb flavors well. As long as you like the taste, it should be good! This recipe is ALL about substitution.
